Trim skin and membrane from 1 lb baby leef liver. Leave in serving size pieces or cut in strips. Dip in flour, salt and pepper. Fry in hot fat over medium heat until crisp brown about 5 minutes. Turn and fry on the other side. With bacon: Fry bacon first, remove and keep warm while frying liver. With onion: Fry liver, remove, and keep warm. Put sliced onion ring into fat. Cover and steam until soft. Uncover and cook until golden brown.
